'Milch-horses deliver mare's milk direct to the customers' door. A mare will supply milk regularly for perhaps a year after she has foaled. A good horse will produce more than six quarts in 24 hours. A portion of this is consumed by the tag-along foal which takes its share in quick snatches between customers (p.180, Plate 12).'
